Spaghetti Bolognese

Serves 3-4

This is another dish where you can make several portions in one go and freeze what you don't eat on the day for other meals. You also use this recipe to make the meat sauce for Lasagne.

Although traditionally served with Spaghetti, you can use always use another pasta, e.g. Penne (tubes) or Fusilli (spirals). Allow 100g of Pasta per person and follow the cooking instructions here.

The tomato ketchup thickens and sweetens the sauce.

Ingredients

 

250g beef mince

1 medium onion, finely chopped

1 garlic clove, crushed

4 button mushrooms, chopped

¼ red pepper, chopped

¼ green pepper, chopped

1 tsp mixed herbs or basil

400g can chopped tomato

4 tbsp tomato purée

1 beef stock cube

4 tbsp tomato ketchup

150ml (¼ pint) water

Method

  1. Fry the mince, onion, garlic, peppers and mushrooms together in a pan that can be covered for about 5 minutes or until the mince is brown and running juices
  2. Add the tomatoes, purée, stock cube, herbs and water
  3. Cook on a medium heat for 5 mins, put the lid on and turn down to a low heat
  4. Cook for 20 minutes minimum, more if you have the time
  5. About 5 minutes before the end, add the tomato ketchup and stir in
