Baked Trout

Serves 1

This recipe can be easily increased, just repeat the process on each fish and increase the herbs and garlic. You can also replace the trout with any filleted fish but it will cook even quicker!

Ingredients

 

1 Rainbow Trout

Small bunch of fresh mixed herbs or 1 tsp of dried mixed herbs

1 clove of garlic, thinly sliced

Salt and black pepper

2 tsps oil

Method

 

  1. Preheat oven to 190C (Gas Mark 5)
  2. Rinse the fish and dry well on kitchen roll
  3. Remove the head at this stage if you prefer
  4. Rub with oil and place the fresh herbs and garlic into the cavity, reserving a few for the top. Or if using dried herbs, sprinkle on the inside and outside of the fish
  5. Season well with salt and pepper, then wrap loosely in foil
  6. Put on a baking tray and bake for about 15 mins, then open the foil and continue cooking for 5 minutes
  7. Fish doesn’t take very long to cook and over cooking it can spoil the flavour. If you left the head on the fish is cooked once the eyes have turned white. If you didn't leave the head on then press gently and the flesh will be firm to the touch when it is cooked
