Braised Beef

Serves 3 (or 2 very hungry people!)

Serve with boiled or roasted potatoes and a side helping of any vegetables

Ingredients

 

500g braising / casserole beef, cubed

1 medium onion, chopped

1 medium red onion, chopped

1 clove garlic, crushed

Bunch of fresh mixed herbs finely chopped or 2 tsps dried mixed herbs

2 bay leaves (desirable, but not essential)

2 tbsp oil

1 tsp sugar

1 tbsp tomato purée

Seasoning (salt and pepper)

1 red pepper, sliced

Cornflour (for thickening)

284 ml (10 fl oz) of stock made with 1 beef stock cube

4 large mushrooms, sliced

Glass of red wine (optional)

Method

 

  1. Heat the oil in a pan, add the cubed beef and brown
  2. Add all of the vegetables and stir fry for 5 mins
  3. Add the stock, wine, sugar, tomato puree, seasoning and the herbs and bring to boil
  4. Transfer to an oven proof dish and cook for 45 minutes or until the meat is tender
  5. Thicken the sauce, following the instructions on the packet of Cornflour
  6. Cook for a further 5 minutes
  7. Serve with boiled or roasted potatoes and side helping of any vegetables
